Rustic, Delicious and Simple! This recipe is one that will save you time while ensuring maximum flavor.
Who doesn't like a good roasted chicken? This one is spicy, juicy, colorful, and has lots and lots of flavor. The garlic, herbs, and lemons all come together to deliver a succulent and memorable dish that is bound to be the centerpiece at any dinner party!
Prep time: less than 10 minutes
Cooking time: 110 minutes
Serves 2 to 4 people
Fresh Herbs are recommended, but if you are no able to get those...just use what's in your pantry!
A whole chicken
2 heads of garlic (halved)
2 lemons (halved)
Fresh Rosemary or 1 tablespoon of Rosemary
Fresh Thyme or 1 tablespoon of Thyme
1 1/2 teaspoons of Smoked Paprika
1 teaspoon of crushed red peppers flakes
1 tablespoon of black pepper
1 teaspoon of ground sage
1 1/2 tablespoon of Salt
Extra Virgin Olive Oil
Preheat the oven to 350 degrees F / 170 degrees C.
Pat chicken dry with a paper towel. Doing this will guarantee a crispier skin. Remove the innards and save for future gravies or stock. Set chicken aside.
Slice garlic heads and lemons in halves.
In a container mix the rosemary, thyme, paprika, crushed red peppers flakes, black pepper, sage and salt.
Rub some olive oil inside the chicken cavity.
Using your hand or a spoon, rub 1 tablespoon of the dry ingredients in the chicken cavity.
Insert the garlic and lemon halves.
Rub the chicken with olive oil.
Apply the remaining dry rub all over the chicken.
Place in a baking dish.
Bake uncovered for 110 minutes or until the chicken reaches an internal temperature of 165 degrees F / 75 degrees C.
Remove from over and cover with aluminum foil. Let it rest for 10 minutes.
Serve and enjoy!
