Joe's Rustic Irish Beef Stew

Looking for an easy recipe for St. Patrick's Day, or any day? Try this Irish Beef Stew! Granted, it is loaded with calories...but it is so good!


Prep time: 20 minutes

Cooking time: 3 hours

Serves up to 10 people

INGREDIENTS

This is a simple take on a traditional Irish Beef Stew. You can use a gluten free beer instead of wine. I actually recommend that.

  • 3 lbs/ 1.3 kg stew beef

  • 3 lbs/ 1.3 kg potatoes

  • 8 cups of beef stock

  • 1 cup of red wine or gluten free beer

  • 1/4 cup of vegetable oil

  • 2 tbs Worcestershire sauce

  • 2 tbs tomato paste

  • 2 bay leaves

  • 4 whole carrots

  • 1 large Spanish onion

  • 8 cloves of garlic

  • fresh thyme

  • fresh parsley

  • sea salt

  • ground black pepper

  • 4 tbs unsalted butter

  • 1 tbs refined sugar

Method

  1. In a hot deep pan heat oil.

  2. Brown meat in batches with the garlic. Do not overcrowd the skillet.

  3. Add tomato paste, red wine or gluten free beer, beef stock, thyme, bay leaves, sugar and 1 tsp of salt/pepper both.

  4. Bring to a boil, reduce heat to medium, cover and simmer for 40 minutes.

  5. In a different pan melt the butter.

  6. Add the potatoes, onions, carrots, a pinch of salt and a pinch of pepper.

  7. Cook for 20 minutes. Remove from heat and set aside.

  8. After 40 minutes, add the potatoes, carrots and onions to the rest of the stew.

  9. Bring to a boil. Reduce heat to medium and cook uncovered for 1.5 hrs or until the meat is tender.

  10. When ready, skim the excess fat/grease from the top.

  11. Serve and finish it by adding the chopped parsley.

  12. Enjoy!
